The solution for me was SUPER easy… Not even a bug… just a user interface thing. In the upper left-hand corner of the ChatGPT window, the weird little rounded rectangle with a line and two dots–IS THE OPEN SIDEBAR BUTTON! Click it and your lost projects magically appear in the sidebar.
