Let’s say I create an assistant once. Can I share that between users of my site without those users being able to see each others conversations? Do threads create that level of isolation, so if I create a new thread for each user, on the same assistant, they will have privacy from each other?

Yes, each thread is a silo’d conversation. As long as a new thread is created for each user/session they won’t intertwine.
