The instruct models are outdated. Text 001 or 002 models
Instruct is still good. I actually prefer it a lot of the time
I agree they all proform differently with different applications but if you are asking how to use a model its probably better to start with a text model.

They are older versions. They still can be useful for spesific things, but for general use i would suggest you stick to text-davinci-002
