I’m thinking of using one of the embedding models and I was wondering if once the embeddings are created with the API, it will be necessary to retrain once again when OpenAI updates such model.

For any model that you use including embeddings models, you will always have to plan for the scenario where the model might get updated and/or deprecated at one point.
After the recent updates to embedding models, there is currently no information available as to how long these will be available and/or when the next major update can be expected. Typically though, legacy models will stay in place for some time even after new model is introduced, providing you with some additional time to plan the best course of action.
