I was just wondering what OpenAI’s data-at-rest encryption policy was for data sent through the API, as I’m aware that it’s stored for 30 days and wanted to know what, if any, encryption was being used to secure that data.

I have not seen that particular information listed, you can try emailing support@openai.com and request the information, they are extremely busy though so it could be several weeks for a reply. You can Also try the support bot over on help.openai.com (bottom right corner icon) and pose the query there.
