After reading the docs, I assumed it was best to use text-davinci-edit-001 to correct errors in text (grammar, spelling). I get good results from it, but have also tried with text-davinci-003 and find that equally good. So what is the advantage of using the more specific text-davinci-edit-001?

Good question! Not sure if I know the answer. I would stick with the one that’s cheapest while fulfilling your needs.
