having the ability to pin chats to the top would be a nice feature to have, just like with whatsapp.

It’s not exactly the same, but you can certainly bookmark individual chats in your browser with essentially the same effect.
Another fun: share the chat, get a link. The link, you can “continue this conversation” where it left off when shared any time you want.
In settings->data controls is a management listing of these if you want a different type of bookmarks.
Wishful thinking would be to also be able to share or remember the custom instructions that way.
